    City of the Lost Children.
    The ever present LOTR trilogy.
Big Fish has some good visuals as well.

Sci fi tends to have a lot of concept work, might want to check these out if you haven't done so already. And yes, I realise most of them wouldn't be described as "recent"..

    Alien / Aliens
    The Matrix
    Starship Troopers
    Star Wars trilogy
    Predator
    Blade Runner
    Terminator 1 and 2
    Equilibrium
Dune ( crap movie but it does look cool )

if you like the 5th Element you may also really enjoy my fave movie of all time by the same director, Luc Besson, Le Grand Bleu. Don't worry, it's in english.
Not exactly a deep well for conceptual inspiration...the enviros and stuff are all very natural...places that actually exist.

Fantasy stuff with sweet concepts? hmmm....Immortel? The story was boring, but visually it was a very stunning film.

I will place a tip myself, this is a animated japanese movie, not your average anime series, this is a visual and creative explosion which story is simply life, its called "Mind Game", one of my favourite movies

I just saw Mirrormask and it was an absolute visual feast. HIGH recommendation for those of us who like lush eye candy.
