Buy the paper you like and have it spiral bound.

Paper is very personal, some people like smooth, some textured, so experiment with different sketchbooks and papers, eezacque's suggestion sounds great as you can buy all sort of weird colored papers, but don't buy so expensive that you keep it so precious and you are afraid to draw to it

I am pretty fond of drawing on brown paper myself, but where I live the major art supply stores don't sell any offical sketchbooks with brown paper, so I get plain paper 'notebooks' with brown paper and draw in them instead. These can also be cheaper than the sketchbooks. There is a lot more choice for tan sketchbooks online. There are Strathmore ones online that are spiral bound.

I've tried Strathmore Toned tan and Daler Rowney Earthbound sketchbooks. Both are good, the Daler Rowney one has more pages but the papers are almost the same.
