There are Monday life drawing classes from 6.00-8.30 for $3. It's at Galleries Victoria (where Kinokuniya is) in Arthouse Hotel (http://www.thearthousehotel.com.au/)
COFA also offers short courses both during the semester and during the breaks. It's around $300 for 10 lessons. It's located in Paddington.
Julian Ashton (located in the rocks) offers classical painting courses/life drawing courses for around the same price.
I'd recommend the one in Galleries Victoria to anyone. It's cheap. You can go whenever you like (and stop whenever you like). I've been going there for 7 years.

I've not had a lot of experience drawing, but from what I hear from my friends in Sydney who do, is that practice really makes perfect. You can only learn so much techniques from classes, but what you really need to do is rope in a few friends or classmates and hunker down together to get good at drawing and critiquing each others' work.
