I like the last guy, but his ears sits too high on the head.
Instead of a coffee shop you can go to an IRS office. Lots of bored and unsuspecting drawing victims sitting around and no angry baristas. :)
I like the ten minute sketch you did the other day. The proportions aren't too far off, the center of gravity looks ok and he's standing firmly on the floor (as opposed of floating in the air).
If you draw a quick sketch on top of your construction it looks reasonable. The torso is a bit long in my opinion, but it's ok.
I think the reason everything looks off center is the way you drew...
A while ago I heard a lighting tip: "The darkest part of the highlight should never be darker than the brightest part of the shadow" or something like that.

I like the ballerina dancer, but it feels more like she's floating in the air than leaping. Maybe if some strands of hair got caught in the wind and there was a little motion blur it would...
