The album thumbnail is the first attachment in your thread. They only way to change it would be edit your first post and put the attachment you want as your thumb there. Then make a new post and redo the one you had previously. Then whenever you wanted to change the thumb, you would just edit the first post and remove that attachment and add a new one.
