Here are a few books that I consider indespensable.
Expedition, by Wayne Barlowe: An incredable fully painted book based entirely on a fictional alien ecosystem of Barlowe's own creation.
The Art of the Matrix: A huge hardcover that contains all of the conceptual designs, storyboards promotional art for the first Matrix film. This one's a bit pricey though.
Giger's alien: A great book containing all of Giger's air brush paintings and sketches done for the film 'Alien' that also serves as an entire account for his involvement in that movie. Awesome photos as well.
The art of Star Wars books: my favorate being the one on The Return of the Jedi. I first was introduce to the very tallented but not well known Nilo Rodis-Jamero.
The Making of Alien Resurrection: A great book for a mediocre film. If there was one outstanding thing about that movie, it was the sets, props and costumes. Sylvain Despretz did most of those and you get to see a great deel of the artwork produced for the film.
I'll let you know if I think of anything else. I'm almost certain that I forgot something. I definitely know that there are people here who've been published in books. i can't think of any right off the top of my head though.

Any volume of Spectrum. (http://www.budplant.com/prod.itml/icOid/12651)

And the sketchbooks by Bernie Wrightson. (http://www.budplant.com/prod.itml/icOid/13293) Just awesome sketches and concept work. I keep a copy under my pillow at night.
