How does one get colour to say within lines/flat boundaries?

He has created the flats, and when he's shading he takes the brush over the edge of the flat but it doesn't spill past the flat's edge. How do you do this? It would make shading so much simpler.

And does anyone have any tips for flatting, coz I look all over the net and different people have different ways for doing it, but none of them help with really detailed pictures.

the select tool is what i think your talking about.....

If you look at his Layers Palette, you'll see that he has transparency locked for each one.
