I'm about to do a painting which will be shown on a website for prints and the painting itself will be sold in the shop as an original. My question is, when that painting has been sold in the shop, do I still hold rights to sell the prints online? And what about the digital caption of the painting, is that under my copyright, or the person who bought the painting?

You hold the copyright to everything unless you specifically transfer it, or any piece of it, in writing. Ownership of copyright and the physical object have nothing to do with each other.
