FOr some reason, I've noticed that I am having a really hard time with values in color. I feel that I have a very strong black and white value perception, but when it comes to colors, it all gets thrown out the window..
ANyone know of any things that might help me learn to see value in colors?

Trying to much the value and hue of a color you see is hard when you try to do it all at once. You need some practice before doing it successfully. Until then, do grayscale drawings/paintings. Add color to painting once that's done.
Also make a color wheel with yellow on top. Then put a a bar to the right that denotes value, with white on top and black on bottom. With a ten point scale, you'll see that purple is like a 2, yellow a 9, and red orange and blue green are a 5.
