This is the picture I had trouble scanning. Thanks for everyone's help. (if you were wondering, I folded the image in half, then folded that in half.) Although the other tips were very interesting too. Now I know how they scan enourmous paintings.

The thing that's bothering me though, is the way the knife seems very flat. Is there some way I could modify it to increase it's thickness? It's taken me forever to scan, so is there a way I could do that within Photoshop?

Any other critiques are welcome.

Try this with a B pencil though. Make 10 distinct shades with it. You can do this with any pencil really but what it'll do is help you create more values with your pencil and That'll help your depth.

As for in PS, maybe try mixing a gradient with the pencil or painting right over it.

and I noticed that where the handle hooks up with the blade, you're not showing how thick the blade is.

You're also not showing a far edge.. the way most people craft knives, it's possible to see how they fold away from view by a slight darkening of an edge that's not visible from the angle you're viewing at.. Take a look at a knife and see how the edge changes as the curvature of the blade changes..

it's really good though, try to put some highlights in to see how that affects the forms :c)
