When an oil paint is done, is there something like a clear oil to put over the whole piece, a finishing varnish of some sort? I think it was mentioned by one of my teachers, but never really talked about in school. The problem that got me asking is that I mixed too much linseed oil into some of my paint, and right now I can see certain area or brush strokes shiny while the other parts are dull. So I figured coating the piece later would solve that problem.

Yes. After the painting has been "drying" for at least a month you can put a retouch varnish on the painting to even out the shine- at least 6 months after completing the painting you can put a final varnish on it. the only difference is the solvent to resin ratio in the varnish.
