Just thought maybe you guys could clear something up for me, I've been asked by a director to produce a series of concept paintings in the ratio 1:2.40

Does he mean 2:40:1, a ratio used by Panavision lenses apparently? And if so what resolutions does this cover? I couldn't find much info on the internet, it doesn't seem to be a commonly used ratio. You'd think with my animation background I'd know this, but not this time!

Its just a film aspect for wide screen, its 2040x1080 pixels.

1080 x 2040? That doesn't sound right. That would be 1.8888:1.
1080x2592 would be correct mathematically, but probably on the small side.

2.4:1 means the image is 2.4 times wider than the height.

Sounds like the sizing is up to you, so just choose an image height that will give you the resolution you need, say 2400 for a start, then your width will be 2.4 times that number, which would be 5760.
