Mac OS X Time Machine (http://www.apple.com/macosx/features/timemachine.html), perhaps?

I've been lazy so I haven't configured mine yet.

I save incrementally a lot, e.g. MyDrawing4c.psd

Adobe VersionCue might work as well. It saves previous versions of all your files.
