Off the top of my head - Sheridan, OCAD and maybe Centennial.

What part of Canada? What sort of illustration?
Of the three mentioned, with some guidance OCAD would probably give you the best illustration specific package in Ontario. Sheridan may be comparatively okay, but it's nothing like it was in the early 80s.
I hear good things are happening in Alberta and BC, but you'd need locals to help out with advice there.
Saskatchewan, Manitoba and the Maritimes are dead zones as far as news about strong programs. I was born in Winnipeg and would love to hear they developed a good art program. Quebec may have good programs (it should), but again no news. It could be that most graduates end up serving the French market. I did a ton of work for French language TV & film in the late 90s and early part of this decade and all they guys I worked with were from Ontario or the US, though.

Are you interested in illustration for a career in concept art, or illustration for comics/graphic novels ? Richard is right- you need to tell us more.

Put The Academy of Realist Art (Toronto) on your list. It's amazing!

I'm the Director of Max the Mutt in Toronto. We now offer a four year Diploma in Concept Art for Animation and Video Games ( a combo of traditional representational fine art, illustration and concept specific courses). Years one and two will be in full swing in September. I'd be happy to tell you more about the program and answer questions you may have, but please post to me on the Max the Mutt thread or email admissions@maxthemutt.com. The web site will give you info and there is a student gallery.

I have a bias against OCAD <_<. Heard some horror stories, and it's more focused on modern/post-modern experimentation art. Never really liked it at all *shrug*.
