how do you store larger paintings (16x20 up to 30x40) that you have done on heavy stock artist paper that you don't want to frame?

What kind of paint?
Watercolour or acrylic I'd put into a big portfolio case or plastic folder and stash them under my bed.

yeah, sorry it would be acrylic and maybe some watercolor

Then I'd go with "stash 'em under the bed".
They won't get bashed by anything, it's space you don't use and since it's dark under there you don't even need to worry about light bleaching them out.
Your only issue might be mould / condensation if you're in a really damp or cold environment since there won't be much ventilation/airflow under there.
*By way of reference, I'm in Scotland, Northern Europe which is pretty cold and damp and I've never had problems..
