I find working out from the nose works best after u establish the face's boundaries ( a light outline) or not, I dont know.

I usually start with an oval shape indicating the tilt and direction of the head. Then I rough in a sketch of the skeleton/body mass. Then I go back to the face and using light ovals, I mark in where I see the eyes, nose and mouth and eventually begin layering shading and line work to pull out detail.
Practice drawing skulls from different angles. You'll start to see how the bone sits underneath muscle and tissue, and they above it.
Hope that helps.

get andrew loomis' books from www.saveloomis.org i think, get any books by george bridgeman, esp. the one about the head and buy figure drawing by anthony ryder. those will help with getting the face and forms correct.
first DON'T focus on getting a likeness, just learn the blocks and planes and shapes of the head. try starting off with a gesture sketch and block in the shapes. if this was just your first class, pay more attention to proportions and shapes rather than details. check out kchens threads on here and the one by fredflickstone. awesome stuff in those. good luck, have fun and get a scanner!! :D hope this helps
oh and ask questions :)

here this might help... Ron Lemen @ Watts Atelier did a step by step demo of the way to approach a drawing. Since i know he has tutorials on the way, and the picture quality is ok, i will just link it for you.
